Peaches and Cream Sponge Cake (Biszkopt z Kremem i Brzoskwiniami)

Orange Fruits, Creamy Filling, Jello and Sponge Cake

I really like a combination of fresh fruits, creamy fillings and soft sponge cakes.
I find it very resfreshing and light.
I created this recipe to celebrate the end of the summer season.
Everyone loved it!



Peaches and Cream Sponge Cake:
(baking pan 10x15 in)


INGREDIENTS
1) Sponge Cake: 
(2x - make two sponge cakes or double the proportions and make big cake to cut in half later)

3/4 cup of flour
3/4 - 1 cup of sugar
3 eggs
1/3 cup of water
1 tsp of vanilla extract

2) 2x orange jelly

3) Creamy Filling:
400  ml (5-6 US oz) heavy whipping cream
2/3 cups of powdered sugar
1.5 tsp of gelatin
1/3 cup of hot water
1 lemon - juice and zest 

4) Pudding Filling:
3 cups of milk
3 tablespoons flour
3 tablespoons cornstarch
3 egg yolks
1 cup sugar
250g butter
+ less than a 1/2 cup of the canned fruits syrup

5) 1 can of fruits in light syrup ( tangerines, peaches , apricots )
I 've used mandarins and apricots.

6) 2-3 fresh peaches


PREPARATION
1) Prepare the jello first: dissolve the jello in 750 ml of hot water,
let cool and allow to thicken
(you can put it in the fridge to thicken).

2) Creamy Filling:
Start with mixing the gelatin with hot water.
When dissolved, let cool.
Whip the heavy cream, add sugar,
zest and juice from one lemon .
At the end, add the cooled gelatin.
Put in the fridge until the cake is completely cooled.

3) Pudding Filling:
Get 3 cups of milk.
Measure 1/2 cup of milk, leaving 2.5 cups left. 
To a 1/2  cup of milk, add egg yolks, flour and potato starch,
Mix well .
Bring the remaining 2.5 cups of milk to boil, adding sugar
stirr constantly .
When boiling, reduce the heat ,
 pour the 1/2 cup of milk with egg yolks and flours.
Keep mixing and boil for about one minute to thicken.
Remove from the heat, allow to cool .

Cut the butter (at room temperature) into small pieces .
Add cooled pudding,
 and less than half a cup of syrup from the canned fruits.
Mix/beat well to connect all the components into a smooth paste .

Allow to cool.

4) Sponge Cake:

Whip the egg whites to a stiff mass, add the sugar and continue to beat.
In a separate bowl, beat the egg yolks, flour, water and vanilla sugar.
Add mixture to the bowl with whipped foam and gently mix with a spatula,
The less we destroy whipped foam, the more fluffy our sponge cake will be.
DO NOT mix the egg whites foam with other ingredients using a mixer.

Preheat the oven to 390F.

Line the pan with baking paper.
Very gently, transfer the batch to the pan and bake for about 15 - 17 minutes.
Let the cake cool after baking,
transfer the cake from the pan.
Cut the edges off if your sponge cake is not perfect on the edges.

Cool two baked sponge cakes 
or cut in half a big sponge cake.

Transfer to a new pan lined with aluminum foil or baking paper.

Lay first sponge cake on the bottom.
Spread the chilled whipped cream filling on top of the cake.
Lay the peeled and sliced fresh peaches.

Cover with a second sponge cake.
Spread the pudding filling.
Lay the canned fruits (or fresh, if you can) on the filling.
(I used mandarins and apricots in a light suryp).
Take out the thickening jello from the fridge and pour it over the top.
Put in the fridge to cool for at least couple of hours
(preferably overnight).

Serve with fresh fruits.

Bardzo lubię połączenie świeżych owoców i kremowych mas z miękkim biszkoptem.
Są niesamowicie lekkie i delikatne.
Stworzyłam ten przepis by uczcić zakończenie pysznego, owocowego sezonu letniego.
Wszystkim bardzo smakowało!

Biszkopt z Brzoskwiniami, Morelami  I Mandarynkami
(blacha 25 x 40cm)

1) Biszkopt:
3/4 szklanki mąki
3/4 - 1 szklanka cukru
3 jajka
1/3 szklanki wody
1 łyżeczka ekstraktu waniliowego

UWAGA:
Jeśli używacie dwóch osobnych blaszek, zrobić dwa ciasta z podanej porcji.Jeśli używacie jednej blachy, podwójcie porcję i przetnijcie upieczony biszkopt na pół.

2) Śmietanowy Krem:
150-200 ml śmietany do ubijania (30%)
2/3 szklanki cukru pudru
skórka i sok z 1 cytryny
1,5 łyżeczki żelatyny
1/3 szklanki gorącej wody


3) 2x galaretka pomarańczowa (2x75g)


4) Masa Budyniowa:
3 szklanki mleka
3 łyżki mąki
3 łyżki mąki ziemniaczanej
3 żółtka1 szklanka cukru
250g masła
+ mniej jak pół szklanki syropu z owoców w puszce

5) Puszka owoców w lekkim syropie
 (mandarynki, brzoskwinie, morele)
Ja użyłam mandarynek i moreli.

6) 2-4 świeże brzoskwinie


PRZYGOTOWANIE

Masa Budyniowa:
Z 3 szklanek mleka odmierzyć i odlać pół szklanki mleka.
Do pół szklanki mleka dodać żółtka, mąkę pszenną i ziemniaczaną,
Dobrze wymieszać.
Pozostałe 2.5 szklanki mleka zagotować wraz ze szklanką cukru,
Ciągle mieszając.
Zmniejszyć ogień.
Do gotującego się mleka wlać mieszaninę mąki z żółtkami i mąkami.
Ciągle mieszając, pogotować jeszcze przez około minutę do zgęstnienia.
Odstawić z ognia, schłodzić.

Masło w temperaturze pokojowej pokroić w drobne kawałki.
Dodać schłodzony budyń i mniej jak pół szklanki syropu
(z moreli, brzoskwiń, bądź mandarynek – zależy jakie mamy owoce.)
Dobrze zmiskować do połączenia sie wszystkich składników na gładką masę.
Odstawić masę budyniową do schłodzenia.

Śmietanowy Krem
Wymieszaj żelatynę z gorącą wodą .
Po rozpuszczeniu żelatynę ostudzić .
Ubić śmietanę miskerem, dodać cukier,skórkę i sok z jednej cytryny.
Na koniec, dodaj schłodzoną żelatynę i dobrze wymieszaj.
Można schować masę tymczasowo do lodówki, aż ciasto całkowicie ostygnie.

Galaretka:
Stosować się do przepisu z opakowania, używając jednak mniej wody.
Chłodzącą się galaretkę włóż do lodówki,mieszając od czasu do czasu.

Biszkopt:
Ubić białka na sztywno, dodać cukier, nadal ubijać.
W osobnej misce zmiksować żółtka, mąkę, wodę i cukier waniliowy.
Miksturę dodać do miski z ubitą pianą i delikatnie wymieszać szpatułką,
Aż do połączenia się składników.
Im mniej zniszczymy ubitą pianę, tym bardziej puszysty będzie biszkopt.

NIE MIKSOWAĆ mikserem.

Schłodzić dwa upieczone biszkopty
(lub przeciąć na pół jeden duży).

Przełożyć do osobnej blachy wyłożonej folią aluminiową bądź papierem do pieczenia.

Na pierwszym biszkopcie wyłożyć masę śmietankową.
Obrane ze skórki i pokrojone w plasterki brzoskwinie wyłożyć na masie śmietankowej.
Przykryć drugim biszkoptem.
Wylać masę budniową.
Ułożyć morele z syropu naprzemiennie z mandarynkami.
Zalać tężejącą galaretką.
Włożyć do lodówki do schłodzenia i całkowitego stężenia galaretki.
Serwować ze świeżymi owocami.

Summer Apricot Cake (Ciasto Ucierane z Morelami)

Summer Cakes

I took a little break from active blogging yet I remained very active in my kitchen.
I have been trying to use all seasonal fruits and vegetables in my cooking and I really enjoyed it!

We got some apricots the other day which inspired me to look for an apricot cake recipe.
I stumbled upon this great recipe on one of the food blogs and I decided to try it out...
It was an easy bake, looked beautiful and tasted wonderful!


This delicious and light cake is a great option for summer garden parties.
I love how light and mouthwatering it is!
Fresh apricots only add to the summer taste.
 Sprinkle it with powdered sugar and you have a tasteful dessert!


Apricot Cake:
6.5 oz of flour (180g)
1 tsp of baking powder
4.5 oz (125 g) of butter
4 oz (120g) of sugar
2 eggs
10 apricots, halved and pitted

With an electric mixer, beat the butter with sugar.
Add baking powder, eggs and flour.
Keep beating until mixed well.
Wash and dry apricots.
Slice in halves, remove the pits.
Preheat the oven to 350F (180C).
Grease the 9 in diameter cake pan (24 cm), sprinkle with bread crumbs.
Pour the cake batch into the pan.
Place the halved apricots on top.
Bake in the preheated oven for about 50 minutes or until golden brown.
Let cool.
Sprinkle with powdered sugar.

Pomimo iz zrobilam sobie małą przerwę od aktywnego blogowania
nadal pozostalam bardzo aktywna w mojej kuchni .
Staram sie wykorzystać wszystkie sezonowe owoce i warzywa w mojej kuchni,
gotujac z tego, co akurat mozna znalezc na straganach i bardzo mi się to podoba!

Przepis zaadaptowany z tej strony.

To smaczne i lekkie ciasto owocowe jest doskonalym pomyslem na letni deser!

Ciasto z Morelami:
180g maki
1 łyżeczka proszku do pieczenia
125 g masła
120g cukru
2 jajka
okolo 10 moreli
cukier puder do posypania na wierzch


Mikserem ubić masło z cukrem.
Dodaj proszek do pieczenia, jajka i mąkę.
Miksowac aż do polaczenia skladnikow.
Morele umyć i osuszyć.
Przeciac na pół, usunąć pestki.
Rozgrzej piekarnik do 180C.
Natluscic forme na ciasto o średnicy 24 cm,
wysypac bułką tarta.

Wylac ciasto na blache,
ulozyc polowki moreli na ciescie
(przekrojeniem do gory).
.
Piec w nagrzanym piekarniku przez około 50 minut lub do złotego koloru .
Po ostudzeniu posypać cukrem pudrem.
