Pierogi with Spinach.

Pierogi filled with spinach and ricotta

Once you have made pierogi once, you will keep coming up with new fillings.
There are some traditional ones and there are the ones that are your absolute favorite. 

Here is a quick reminder on how to make any pierogi.

Pierogi filled with spinach, ricotta and garlic are divine!




INGREDIENTS:
(about 40-50 pierogi)

Filling:
2 bags of spinach (about 10oz each)
1 onion
2 cloves of garlic
3 tbsp ricotta cheese
1 tbsp freshly grated parmesan
2 tbsp panko bread crumbs
Olive oil
salt
pepper

Dough:
3 cups of flour
1.5 cup hot water
pinch of salt


Follow instructions on how to get started with the dough and how to make pierogi

INSTRUCTIONS:

Start with cooking spinach.
If the spinach leaves are big, chop them up and remove the stems.

Pour a little bit of water and cook spinach in a pan until it shrinks and softens.
Squeeze out the excess water, drain cooked spinach.

Add olive oil to the pan,
add diced onion and simmer until translucent.
Add minced garlic, simmer for about 2 minutes.
Add spinach, salt and pepper to taste.
Simmer.

Remove from heat, 
let cool.

Add ricotta cheese, freshly grated parmesan 
and panko crumbs for that extra crunch.

Mix well - your filling is ready!

When you have your dough ready, 
pot with salted, boiling water with a bit of oil,
start filling the pierogi with spinach.

Boil and serve hot alone or with sour cream, 
parmesan or just like you like them the most!

Jak już raz się zasmakuje pierogów i spróbuje ich przygotowania, 
możliwości farszu jest mnóstwo!

Jeśli jeszcze nie próbowaliście pierogów ze szpinakiem, 
gorąco polecam, są naprawdę pyszne!


SKŁADNIKI:
(ok. 40-50 pierogów)

Farsz:
2 torebki szpinaku (około 300g każda)
1 cebula
2 ząbki czosnku
3 łyżki sera ricotta
1 łyżka świeżo startego parmezanu
2 łyżki panko lub bułki tartej
oliwa z oliwek
sól
pieprz

Ciasto:
3 szklanki mąki
1,5 szklanki ciepłej wody
szczypta soli


Postępuj zgodnie z instrukcjami z wcześniejszego postu,


PRZYGOTOWANIE:
Zacznij od ugotowania szpinaku.
Jeśli liście szpinaku są duże, posiekać i usunąć łodygi.

Wlać trochę wody i gotować szpinak na patelni, aż się skurczy i zmięknie.
Odcisnąć nadmiar wody, odcedzić ugotowany szpinak.

Wlać oliwę z oliwek na patelnię,
dodaj pokrojoną w kostkę cebulę i dusić, aż będzie przezroczysta.
Dodaj przeciśniętego czosnku, gotować razem na wolnym ogniu przez około 2 minuty.
Dodać szpinak, sól i pieprz do smaku.
Dusić.

Zdjąć z ognia,
ostudzić.

Dodaj ser ricotta, świeżo starty parmezan
i bułkę tartą lub panko.

Dobrze wymieszać.

Jeśli ciasto jest gotowe,
a garnek wrzącej wody z odrobiną oleju się już gotuje,
można rozpocząć napełnianie pierogów szpinakiem.

Gotować i podawać na gorąco samodzielnie lub z kwaśną śmietaną,
parmezanem lub tak jak lubisz najbardziej.

Lemon Ricotta Cookies (Ciasteczka z Ricottą i Cytryną)

Tea time calls for cookies

Food Network is known for having excellent cooks, recipes, magazine and shows.
You probably have at least one favorite recipe that comes from one of the Food Network's cooks. 
Among many excellent cooks and recipes, I think that this recipe is worth calling it one of the best Food Network recipes. 
Lemon Ricotta Cookies recipe is by Giada (Giada De Laurentiis) - 
the cookies are soft, moist and very refreshing.
Suitable for any occasion, not only for Italian food admirers.
They can easily last more than 2-3 days, if there will be any left when you bake them!

I already baked them a couple of times, where I was able to change the ingredients and proportions
based on our preferences. I cut the sugar and increased the amount of lemon.
Simply delcious and one of our favorites!




INGREDIENTS

Cookies:
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt (I used only 1/2 tsp)
1 stick unsalted butter, softened
2 cups sugar ( I used only 1/2 cup sugar)
2 eggs
1 (15-ounce) container whole milk ricotta cheese
3 tablespoons lemon juice (I used juice from 1 large lemon)
1 lemon, zested

Glaze:
1 1/2 cups powdered sugar
3 tablespoons lemon juice
1 lemon, zested

PREPARATION
Preheat the oven to 375 F.

Cookies:
In a medium bowl, combine the dry ingredients: flour, baking powder, and salt. 
Set aside.
In the large bowl, combine the butter and the sugar. 
Using an electric mixer beat the butter and sugar until light and fluffy, about 3 minutes.
 Add the eggs, 1 at a time, beating until incorporated. 
Add the ricotta cheese, lemon juice, and lemon zest. 
Beat to combine. 
Stir in the dry ingredients.

Line two baking sheets with parchment paper. 
Spoon the dough onto the baking sheets. 
The dough will be hard and difficult to spoon onto the baking sheet.
Do your best, it will not be perfect.
Bake for 15 minutes, until slightly golden at the edges. 
Remove from the oven and let the cookies rest on the baking sheet for 20 minutes.

Glaze:
Combine the powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth.
You can control the thickness of your glaze by adding more or less sugar and lemon juice.
Thick glaze calls for more sugar than lemon juice,
whereas thin glaze calls for more lemon juice than powdered sugar.
I like my glaze relatively thin, so I increased the amount of lemon juice and decreased the amount of powdered sugar. 

 Spoon about 1/2-teaspoon onto each cookie and use the back of the spoon to gently spread. 
Let the glaze harden.

Food Network to jedna z moich ulubionych stacji telewizyjnych, 
gdzie można zobaczyć nie tylko świetne programy, ale także poznać znakomitych kucharzy i ich wyjątkowe przepisy.
Jednym z moich ulubionych przepisów jednego z kucharzy Food Network, Giady,
jest ten przepis na ciasteczka z ricottą i cytryną.
Ciasteczka są niesamowicie orzeźwiające, lekko kwaskowate, nie za słodkie,
delikatnie miękkie i wilgotne.
Z łatwością przechowują się przez kilka dni, 
jeśli ich wcześniej nie zjecie przy gorącej filiżance herbaty.
Piekłam je już kilka razy i byłam w stanie dostosować przepis do naszych preferencji:
znacznie zmniejszyłam ilość cukru i zwiększyłam ilość cytryny.



SKŁADNIKI

Ciasteczka:
2 1/2 szklanki mąki
1 łyżeczka proszku do pieczenia
1 łyżeczka soli (użyłam tylko 1/ 2 łyżeczki)
115g miękkiego masła
2 szklanki cukru (użyłam tylko 1/2 szklanki cukru)
2 jajka
1 pojemnik pełnotlustego serka ricotta (ok. 450g)
3 łyżki soku z cytryny (użyłam soku z 1 dużej cytryny)
skórka otarta z 1 cytryny

Lukier:
1 1/ 2 szklanki cukru pudru
3 łyżki soku z cytryny
skórka otarta z 1 cytryny 

PRZYGOTOWANIE
Rozgrzej piekarnik do 190C.

Ciasteczka:
W średniej misce wymieszać suche składniki : mąkę, proszek do pieczenia i sól.
W dużej misce wymieszać masło i cukier.
Przy użyciu elektrycznego miksera, utrzeć masło i cukier  na puszystą masę, około 3 minuty.
 Dodaj jajka, po jednym na raz, miksując do połączenia.
Dodaj ser ricotta, sok z cytryny i skórkę z cytryny.
Miksować aż do połączenia się składników.
Dodać suche składniki i wymieszać.

Dwie płaskie blachy do pieczenia ciastek wyłożyć papierem do pieczenia.
Wykładać ciasto łyżką na blachę.
Ciasto będzie dość twarde i trudne do wyłożenia.
Piec przez 15 minut, aż ciasteczka się lekko zrumienią na brzegach.
Wyjąć z piekarnika i pozostawić do ostygnięcia  przez 20 minut.

Lukier:
Połączyć cukier puder, sok z cytryny i skórkę z cytryny w małej misce i mieszać, 
aż lukier  będzie gładki.
Możesz kontrolować gęstość lukru, dodając mniej lub więcej cukru pudrui soku z cytryny.
Ja wolę rzadszy lukier, więc dodaję więcej soku z cytryny i mniej cukru pudru.

Lukier nakładać łyżeczką, pozostawić do zastygnięcia.

Spinach and Ricotta Tart with Sun-Dried Tomatoes (TartaSzpinakowo-Serowa z Suszonymi Pomidorami)

I love spinach in any form.
 I often try to think of new ways to prepare it.
 This recipe for spinach tart inspired me to make a slight modification of the original recipe.
My spinach tart was number one at dinner!



INGREDIENTS

Dough:
2 cups flour
115g butter
1/3 cup ice water
Pinch of salt

Filling:
16 oz (460 g) spinach
8 oz (220 g) ricotta cheese
4 eggs
4-6 sun-dried tomatoes
2.5 oz (75 g) grated Parmesan cheese
3 cloves of garlic
nutmeg
dried basil
salt
pepper

Freshly grated parmesan cheese on top

PREPARATION

Dough:
In a large bowl, combine flour, salt,
Add chopped butter,
Add ice cold water,
knead the pastry.

Shape into a ball, wrap in a plastic wrap and put in the fridge for about 30 minutes.

Prepare the tart mold (diameter 10 in),
grease with butter.
Roll out chilled dough between two sheets of waxed paper,
Gently remove one paper and put the dough into the mold.
Peel off the second sheet of paper,
 work with the dough especially around the edges.
Cut the  unnecessary dough off.
Prick the bottom with a fork,
Cover with aluminum foil and put some weight on it
(special weights or dry rice, dry beans , etc.).
Put in the preheated oven to 390F (200C)
Bbake for about 7 minutes.
Carefully remove the tart pan from the oven,
Remove the paper and weights -
Bake for 5 moreminutes without the weight
until the bottom is lightly browned.
Set aside and prepare the filling.


Filling:
Wash and dry the spinach,
Simmer in a pan with a little bit of water.
Take off the heat when the leaves are tender,
Allow to cool and chop.

Using an electric mixer, beat ricotta cheese in a large bowl until smooth.
Add the eggs,
Add chopped and chilled spinach and parmesan cheese.
Cut dried tomatoes into small pieces,
Chop and add the garlic,
Add all the spices to taste.

Spread the filling on the pre-baked bottom,
Reduce the oven temperature to 350F (180C).
Bake for 30-40 minutes until
the top is starting to brow.
At the very end of cooking,
Sprinkle with Parmesan cheese,
Bake for additional 5-10 minutes.

Best if served hot.

Uwielbiam szpinak pod każdą postacią.
Często staram się wymyśleć nowe sposoby jego przygotowania.
Ten przepis na tartę zainspirowałował mnie do lekkiej modyfikacji orginalnego przepisu.

Moja tarta była numerem jeden podczas kolacji!


SKŁADNIKI

Ciasto:
2 szklanki mąki
115g masła
1/3 szklanki lodowatej wody
Szczypta soli

Nadzienie:
460 g szpinaku
220 g sera ricotta
4 rozmącone jajka
4-6 suszonych pomidorów 
75 g startego parmezanu
3 ząbki czosnku
Gałka muszkatołowa
Suszona bazylia
Sól
Pieprz

Świeżo starty parmezan na wierzch (ok.20g)


PRZYGOTOWANIE

Spód:
W dużej misce połączyć mąkę z solą,
Dodać pokrojone w małe kawałki masło,
Dodać lodowatą wodę
I zagnieść kruche ciasto.

Uformować kulę, zawinąć w folię i włożyć do lodówki na około 30 minut.

Przygotować foremkę do tarty (średnica 25 cm)
Wysmarować masłem.
Schłodzone ciasto rozwałkować pomiędzy dwoma arkuszami papieru woskowanego,
Delikatnie zdjąć jeden papier i przełożyć ciasto do formy.
Oderwać drugi arkusz papieru, wylepić dobrze brzegi,
Obciąć zbędne ciasto.
Nakłuć spód widelcem,
Nakryć folią aluminiową i wysypać obciążeniem
(specjalne obciążniki bądź zwykły ryż, groch, etc.)
Wsadzić do nagrzanego do 200C piekarnika
I piec przez około 7 minut.
Ostrożnie wyjąć formę z piekarnika,
Usunąć obciążenie i papier –
Piec przez kolejne 5 minut bez obciążenia,
Aż spód się lekko zarumieni.
Odstawić i przygotować nadzienie.


Nadzienie:
Umyć i osuszyć szpinak,
Poddusić w niewielkiej ilośći wody na patelni.
Gdy liście zmiękną,
Wystudzić i posiekać.

Ser ricotta ubić mikserem w dużej misce na gładką masę.
Wbić jajka,
Dodać posiekany i schłodzony szpinak oraz parmezan.
Pokroić w drobne kawałki suszone pomidory,
Posiekać i dodać czosnek,
Dodać przyprawy.

Nadzienie wylać na podpieczony spód,
Zmniejszyć temperaturę piekarnika do 180C.
Piec przez około 30-40 minut aż do momentu,
Gdy wierzch lekko się „zetnie” i przyrumieni.
Pod sam koniec pieczenia,
Posypać wierzch startym parmezanem,
Piec przez dodatkowe 5-10 minut.

Podawać najlepiej gorące.
