Red Potato and Parsley Salad (Sałatka z Ziemniaków z Czerwoną Skórką i Pietruszką)

Potato Salad

This is my version of a well known and loved by everyone potato salad.

Red Potato and Parsley Salad:

about 15 small red potatoes
1/2 cup minced onion
2 - 4 tbs mayonnaise
1/2 cup Greek yogurt (I used 0% fat)
1 -2 tbs sugar
1/4 cup cider vinegar (or less)
2 tsp mustard
salt
pepper
1 bunch of parsley

Wash the potatoes.
Boil whole potatoes, in skins.
(Boil sligthly "al dente").
Mince onion.
Chop parsley.
In a small bowl, mix all ingredients for the dressing,
season well to your own taste.
When boiled, cool the potatoes.
Cut the potatoes in cubes (keeping the skins on).
In a large bowl, mix the potatoes with onion, parsley, and dressing mixture.
Toss well.
Add fresh parsley to garnish.
Best after a couple of hours.

Enjoy!

Sałatka z Ziemniaków z Czerwoną Skórką z Pietruszką:

około 15 małych ziemniaków z czerwoną skórką
(te z czerwoną skórką nadają się najlepiej gdyż mają charakterystyczną, kleistą konsystencję)
1/2 szklanki drobno posiekanej cebuli (lub mniej)
2 - 4 łyżki majonezu
1/2 szklanki jogurtu greckiego (użyłam tego o 0% zawartości tłuszczu)
1 -2 łyżki cukru
1/4 szklanki (lub mniej) octu jabłkowego
2 łyżeczki musztardy
sól
pieprz
1 pęczek pietruszki

Umyć ziemniaki.
Gotować całe ziemniaki, w skórkach.
(Najlepiej ugotować nie do całkowitej miękkości).
Posiekać drobno cebulę.
Posiekać natkę pietruszki.
W małej misce wymieszać wszystkie składniki dressingu,
 dobrze doprawić do własnego smaku.
Ostudzić ugotowane ziemniaki.
Pokroić ziemniaki w kostkę (możliwie zachowując skórki).
W dużej misce wymieszać ziemniaki z cebulą, pietruszką i jogurtowym dressingiem.
 Dobrze wymieszać.
Dodać odrobinę natki pietruszki do dekoracji.
Sałatka najlepiej smakuje po kilku godzinach,
kiedy wszystkie składniki dobrze się połączą.

Garlic-Yogurt Dressing Salad (Salatka z Sosem Jogurtowo-Czosnkowym)

How to make delicious and healthy food

within minutes

We just had an unexpected turn out of the events and ended up
having a late dinner at our place.
I wanted to make something special yet using products that I currently had in my fridge.

I decided to make a salad with garlic yogurt dressing.
I like to use the above dressing not only with salads,
but also with warm naans, roasted vegetables, even pizza - the list is endless.
I make slight changes to the dressing every time  -
it can be thinner, thicker, more aromatic, spiced, etc.

It is up to you!

Broccoli salad with garlic yogurt dressing:
2 broccoli crowns
1 large tomato
4 hard boiled eggs

* ingredients may vary

Garlic Yogurt Dressing:
3/4 cup of Greek yogurt ( I use non-fat Chobani)
2 garlic cloves (minced)
Salt
Pepper
Dry Basil
Water (optional)
*sometimes I add a little bit of water to thin down the yogurt
* I use a whisk to mix all the ingredients together

Boil water with a pinch of salt. Put the little pieces of washed broccoli in the pot when the water is boiling
(it will preserve the beautiful green color of the vegetable).
Let the broccoli be al dente (slightly hard).
 Hard boil eggs.
Cut the tomato (I take off the skin).
Start assembling your vegetables in a serving dish. Make the dressing.
Start pouring the dressing on the vegetables.
Sprinkle with more salt, pepper and basil right before serving.

 HEALTH FACTS:

It is a low calorie and a very healthy dish.
It contains no fat, provides you with proteins and vitamin B (eggs),
vitamin A, C, K and antioxidants (tomato and broccoli).
Additionally, Greek yogurt provides you not only with calcium and proteins,
but also with healthy bacterial cultures
 - they are great for your immune and digestive system.
Garlic is widely known as a "natural antibiotic" due to its antibacterial qualities.
Nothing but the good!

Enjoy!

SAŁATKA Z BROKUŁAMI I SOSEM JOGURTOWO-CZOSNKOWYM:
2 brokuły
1 duży pomidor
4 jajka na twardo
* Składniki mogą ulec zmianie

SOS:
3/4 filiżanki greckiego jogurtu (używam beztłuszczowego Chobani)
2 ząbki czosnku (rozdrobnione)
sól
pieprz
suszona bazylia
Woda (opcjonalnie)

Wszystkie składniki wymieszać używając trzepaczki.

* czasami można dodać odrobinę wody jeśli jogurt jest bardzo gęsty

Zagotować wodę z odrobiną soli.
Wrzucić brokuły na gotującą się wodę.
(zachowa to piękny, zielony kolor warzyw).
Niech brokuły będą al dente (lekko twarde).
  Ugotować jaja  na twardo.
Pokroić pomidory (zdejmuję skórę).
Ułożyć warzywa na półmisku, polać sosem.
Posypać dodatkowo sola, pieprzem i bazylią tuż przed podaniem.
