Creamy Swiss Chard Pasta with Parmesan (Makaron z Kremowym Sosem z Boćwiny i Parmezanem)

Greens and Pasta

Swiss chard is one of those versatile greens that you can prepare in many ways.
I like to serve Swiss chard over pasta with Parmesan. 



Swiss Chard Pasta:
1 box/bag/container of your favorite pasta
(I used whole wheat Fusilli)
1 lbs of washed and dried Swiss chard leaves
4 garlic cloves
3 medium onions
1/2 cup of milk
2 tbs of Greek 0% fat yogurt
1-2 tsp of flour
salt
pepper
olive oil

Wash and dry the leaves, chop.
Chop the onions, mince the garlic.
Simmer the onions on a pan with olive oil.
At the end of simmering, add the garlic.
(Garlic burns quickly, it has to go at the end).
Add the chopped leaves to the onions and garlic.
(They will shrink once the water is lost).
Simmer for about 15 minutes or until leaves are soft.
Set aside, let cool.

Use the food processor or a hand blender to chop up the Swiss chard with onions.
Put it back in the pan, heat up.
Add spices, season with salt and pepper.

In the meantime, boil the water for your pasta.
Prepare according to the instructions.

In a bowl, mix the milk, yogurt with flour.
Slowly start adding the mixture to the pan with Swiss chard.
Keep mixing until creamy.
Season more, if necessary.
On low heat, keep simmering the finished creamy sauce for about 3 more minutes.

Drain pasta, make appropriate portions.
Put Swiss chard sauce over pasta.
Sprinkle with Parmesan.

Makaron z Kremowym Sosem z Boćwiny i Parmezanem:
1 karton / worek / pojemnik ulubionego makaronu
(ja użyłam pełnoziarniste świderki)
ok. 500 g  umytych i wysuszonych liści boćwiny
4 ząbki czosnku
3 średnie cebule
1/2 szklanki mleka
2 łyżki greckiego jogurtu 0% tłuszczu
1-2 łyżeczki mąki
sól
pieprz
oliwa z oliwek

Umyj i osusz liście, posiekaj.
Posiekaj cebulę, czosnek przepuść przez praskę.
Na patelni rozgrzej oliwę, dodaj cebulę i podsmażaj na wolnym ogniu.
Pod koniec dodaj czosnek.

Dodaj do cebuli i czosnku posiekane liście boćwiny.
(Liście znacznie się skurczą wraz z utratą wody).
Duś przez około 15 minut lub do momentu, gdy liście są miękkie.
Odstawić, ostudzić.

Za pomocą robota kuchennego lub blendera, rozdrobnij boćwinę z cebulą.
Przełóż na patelnię, podgrzej raz jeszcze.
Dodaj przyprawy, dopraw solą i pieprzem.

W międzyczasie zagotuj wodę do makaronu.
Przygotować zgodnie z instrukcją.

W misce wymieszać mleko, jogurt z mąką.
Powoli zacznij dodawać mieszaninę do patelni z boćwiną.
Podgrzewaj, ciągle mieszając, tak by nie powstały grudki aż do osiągniecia kremowej konsystencji.

Na gotowy makaron wyłożyć kremowy sos.
Posypać parmezanem.

Lecsó (Leczo)

Vegetable Stew

Some fruits and vegetables are so characteristic
 that they easily mark a certain period of time or a season.
Just like strawberries come in May and June, raspberries in July, 
the best tomatoes, zucchinis, and peppers come in August, 
specifically - late August.

I associate those vegetables with the last weeks of summer, 
when I happily use them to make lecso.

Letso is a traditional Hungarian dish made from tomatoes, zucchinis, peppers, onions, 
with an addition of meat, hot and sweet powdered paprika and garlic. 
There are many varieties of this vegetable stew, 
you can vary the type and amount of ingredients, you can also make it vegetarian .

I hope you will enjoy my version of lecso!




Lecso:
2-3 medium summer squash (zucchinis)
4 bell peppers (red, green, yellow)
1-2 small hot peppers (if you would like)
5-7 medium tomatoes
3 medium onions
10 oz sausage
salt
pepper
powdered sweet paprika
garlic (optional)
chili flakes
or
hot pepper mix
olive oil



Remove the skins from tomatoes
(I pour hot water on the tomatoes, it helps to get rid of the skins).
Cut and remove seeds from peppers.
Prepare the vegetables:
cube the tomatoes,
slice the peppers,
slice the onions,
slice only half of the zucchinis,
 grate the second half of the zucchinis
(it gives the dish a nice texture, it's more juicy).
.
If your meat (sausage) is fatty, slice it and simmer in a pan with no grease.
If not, add a little bit of grease to start the simmering.
Simmer sausage for about 10 minutes on medium heat,
until nice and crispy brown.

When your sausage is ready, add half the onions and saute for about 5 more minutes.
Prepare a big pot.
Transfer the sausage with onions to the big pot,
add tomatoes,
half of the peppers,
half of the zucchinis (the grated portion)
and cook under cover for about 20-30 minutes on a small to medium heat,
mix often.
Add salt, pepper, paprika, hot peppers or hot flakes, mix.
You may add fresh or powdered garlic, if you would like.

When the stew gets a nice and juicy consistency, 
add the other half of all remaining vegetables (peppers, onions, sliced zucchinis).
Simmer for another 5-10 minutes,
add more spices if needed.

The reason why I divide my vegetables in half 
is because I don't like my letso very soft, I like to have some al dente pieces in it.

Your letso is ready when your entire kitchen smells divine from simmering 
tomatoes, peppers, onions and sausage.

Season to your taste, I like to make my dish a little spicy.

Serve while hot,
you may add a piece of bread, rice or eat alone.

Leczo:
2-3 średnie cukinie
4 papryki (najlepiej czerwona, zielona, ​​żółta)
1-2 małe ostre papryki (opcjonalnie)
5-7 średnich pomidorów

pieprz

PRZYGOTOWANIE:

Kiedy kiełbasa jest gotowa, dodać pół porcji cebuli i smażyć razem przez około 5 minut.
Przygotuj duży garnek.
Przenieść kiełbasę z cebulą do dużego garnka,
dodać połowę porcji pomidorów,
połowę papryki,
połowę cukinii (startą część)
i gotować pod przykryciem przez około 20-30 minut na małym lub średnim ogniu,
 często mieszając.
Dodać przyprawy:
sól, pieprz, słodką paprykę, ostrą paprykę lub płatki chili i wymieszać.
Możesz dodać odrobinę świeżego lub sproszkowanego czosnku.

Gdy leczo zmieni konsystencję i duszące się warzywa zaczną puszczać sok,
dodać drugą połowę wszystkich pozostałych warzyw (papryka, cebula, plasterki cukinii).
Gotować na wolnym ogniu przez kolejne 5-10 minut,
dodać więcej przypraw w razie potrzeby.

Lubię, gdy warzywa nie są zupełnie rozgotowane,
dlatego proponuję dzielenie porcji na połowę.

W razie potrzeby doprawić więcej do smaku,
ja zawsze przygotowuję moje leczo na pikantno.

Podawać na gorąco,
można dodać kawałek chleba, ryżu lub zjeść samo.

Chicken Korma (Korma z Kurczaka)


Indian Food

Chicken korma is one of the very few Indian dishes I can not only prepare, 
but it actually comes out very tasty and is relatively easy to make.
I found this recipe in one of the "Love Food" book series.
The combination of variety of spices,
 creamy sauce, 
soft and juicy chicken,
 and perfectly cooked rice is unbelievably good!

I instantly loved its creamy yet spicy flavor - mouthwatering!

Chicken Korma: 

(recipe from "Indian, 100 everyday recipes")
1 chicken (3lbs) (I used chicken BREASTS only)

1 cup butter
3 onions, thinly sliced
1 garlic clove, crushed
1 in piece fresh ginger, grated
1 tsp mild chili powder
1 tsp ground turmeric
1 tsp ground coriander
1/2 tsp ground cardamon
1/2 tsp ground cinnamon
1/2 tsp salt
1 tbsp chickpea flour (I used regular flour)
1/2 cup milk
2 cups heavy cream  (I used 0% fat Greek YOGURT)
 fresh cilantro leaves
freshly cooked rice of your choice



I used the recipe from the book as a reference and then I changed it a little.
I used more spices, you should always  use spices to your own taste!


Clean and cut chicken into small pieces.
Covered with water in a skillet and simmer for about 30 minutes.

Heat the butter in another large pan, add the onions and garlic,
cook for about 5 minutes until softened.

Add the ginger and other spices, cook for 5 minutes.

Add the fully cooked chicken, simmer together for 2 minutes.

Blend the flour with a little of the milk and add to the pan,
stir in the remaining milk.
Bring to a boil, stirring, reduce the heat, cover, and simmer for 25 minutes or so.
Stir in the cream or yogurt, cover and simmer for another 15 minutes.
Cook rice according to instructions.

Garnish with cilantro leaves and serve with freshly cooked rice.

Korma z Kurczaka

 Korma z kurczaka jest jednym z niewielu dań kuchni hinduskiej,
ktore nie tylko bardzo mi smakuje,
 ale jest rowniez stosunkowo łatwe do wykonania.
Przepis zaczerpnelam z jednej z ksiazek z serii Love Food,
"Indian, 100 everyday recipes".
Połączenie rozmaitych przypraw,
 kremowy sos,
miękki i soczysty kurczak,
 i doskonale przygotowanu ryż - to jest niesamowicie dobre !


Korma z Kurczaka :

ok. 1-1.5 kg kurczaka (użyłam tylko piersi)
1 szklanka masła
3 cebule, posiekane w cienkie plasterki
1 ząbek czosnku, zgnieciony
1 kawałek świeżego imbiru, startego
1 łyżeczka chili w proszku  (łagodna)
1 łyżeczka kurkumy
1 łyżeczka mielonej kolendry
1/2 łyżeczki mielonego kardamonu
1/2 łyżeczki mielonego cynamonu
1/2 łyżeczki soli
1 łyżka mąki z ciecierzycy (użyłam zwykłej mąki )
1/2 szklanki mleka
2 szklanki śmietany kremówki (użyłam 0% tłuszczu jogurt grecki )
 świeże liście kolendry
świeżo gotowany ryż (wedlug uznania)


Kurczaka oczyścić i pokroić na małe kawałki.
Zalac wodą w rondlu i gotować przez około 30 minut.

Rozgrzać masło w innym dużym garnku, dodać cebulę i czosnek,
gotować przez około 5 minut, aż zmiękną.

Dodać imbir i inne przyprawy, gotować przez 5 minut.

Dodac wszystko do pełni ugotowanego miesa z kurczaka, dusić razem przez ok. 2 minuty.

Wymieszać mąkę z niewielka iloscia mleka i dodać do miski,
wymieszać z pozostałym mlekiem.
Doprowadzić kurczaka z warzywami do wrzenia, zmniejszyć ogień
i ciagle mieszajac, dodac mleko z maka.
 Przykryć i gotować na wolnym ogniu przez kolejne 25 minut.
Pod koniec gotowania, dodac smietanke lub jogurt
(rowniez mozna wymieszac z niewielka iloscia wywaru i maki by zapobiec powstawaniu grudek)
przykryć i gotować na wolnym ogniu przez kolejne 15 minut.

W miedzyczasie gotuj ryż zgodnie z instrukcją.


Udekorować liśćmi kolendry i podawać ze świeżo ugotowanym ryżem.
