Pumpkin Soup (Zupa Dyniowa)

Pumpkin Soup

Pumpkin soup is very filling and very warming, 
perfect for long and dark autumn evenings.
I love its creamy texture, the smell of spices and the warm orange color!



INGREDIENTS
3-3.5 lbs pumpkin (peeled and cut into pieces)
13.5 oz  vegetable stock
10 oz of milk
2 large carrots
4 medium potatoes
1/2 onion
5 cloves of garlic (crushed)
pinch of spices to taste:
curry, cumin, turmeric, nutmeg, salt, pepper,
*sour cream or greek yogurt to top the serving
*parmesan 

PREPARATION

How to peel and cut a pumpkin?
Place the pumpkins on the cutting board, 
(you can place a kitchen towel to prevent the pumpkin from moving)
Cut off the tip and  bottom of the pumpkin, using a sharp knife.
Peel the pumpkin from top to bottom,
removing the peel completely.
Cut the peeled pumpkin in half, then into quarters.
Take out the seeds and clean the pumpkin.
Cut the cleaned pumpkin into pieces.

Peel and cut onions, simmer in a pan with olive oil.
At the end, add the crushed garlic.
Peel the potatoes, cut into thick cubes.
Peel carrots and cut into thick slices.

In a large saucepan, place pumpkins, carrots and potatoes -
pour in broth and milk.
Add salt, cook about 30 minutes under cover,
 until the vegetables are tender
At the end of cooking, add the onions and garlic.
Remove from heat when the vegetables are soft.
Using  the food processor, blend into a creamy consistency.
Add spices ( curry, cumin, turmeric, nutmeg, pepper and salt ).
Cook for another 5-10 minutes on low heat, do not bring to a boil.

Serve with a tablespoon of sour cream or greek yogurt,
you can also sprinkle with Parmesan cheese.
 Season with more nutmeg before serving.

Zupa dyniowa jest bardzo sycaca i niezwykle rozgrzewajaca,
idealna na dlugie, jesienne wieczory.
Uwielbiam jej kremowa konsystencje, zapach przypraw i ten cieply pomaranczowy kolor!



SKLADNIKI
Okolo 1.5 - 1.75 kg dyni 
(Juz obranej i pokrojonej w kawalki)
400 ml wywaru warzywnego
300 ml mleka
2 duze marchewki
4 srednie ziemniaki
1/2 pokrojonej w kostke cebuli
5 zabkow czosnku (zmiazdzony)
szczypta przypraw do smaku:
curry, kmin rzymski, kurkuma, galka muszkatolowa, sol, pieprz
*smietana badz jogurt grecki do podania 
*parmezan

PRZYGOTOWANIE

Jak obrac dynie?
Ulozyc dynie na desce, mozna podlozyc kuchenny recznik, aby dynia sie nie przesuwala.
Najlepiej odciac czubek i spod dyni, uzywajac ostrego noza.
Nastepnie scinac skorke dyni od gory do dolu,
obierajac ja calkowicie.
Przekroic obrana dynie na pol, nastepnie na cwiartki.
Wybrac pestki i wyczyscic.
Oczyszczona dynie pokroic na kawalki.

Obrac i pokroic cebule, zeszklic na oliwie.
Pod koniec dodac zmiazdzony czosnek.
Obrac ziemniaki, pokroic w gruba kostke.
Obrac marchewke i pokroic w grube plasterki.

W duzym garnku, zalac dynie, marchewke i ziemniaki bulionem i mlekiem.
Dodac sol, gotowac ok 30 minut do miekkosci.
Pod koniec gotowania dodac cebule z czosnkiem.
Zdjac z ognia, gdy warzywa sa miekkie.
Rozdrobnic malakserem do konsystencji kremu.
Dodac przyprawy (curry, kmin rzymski, kurkume, galke muszkatolowa, pieprz i sol). 
Gotowac przez kolejne 5-10 minut na wolnym ogniu, nie doprowadzac do wrzenia.

Podawac z lyzka smietany badz jogurtu greckiego,
mozna rowniez posypac parmezanem.
Przyprawic galka przed samym podaniem.

Zucchini Fritters (Placuszki z Cukinii)

Zucchini Fritters with Dill and Sour Cream

We have been collecting quite a lot of summer squash at our local organic farm. 
I wanted to change things a bit in our kitchen 
and came up with an idea to make these great zucchini fritters.

I looked at a bunch of different recipes and this is what I fused into my own version of the fritters.



Zucchini Fritters:
2-3 medium size zucchini
2-4 spoons of greek yogurt or sour cream
1 small onion (diced)
2 garlic cloves (minced)
3 eggs
6-8 tbsp of flour
fresh herbs (dill, parsley, basil, oregano, etc.)
salt
pepper
*optional - dry minced shallots
olive oil or vegetable oil (for frying)

Wash and dry summer squash.
Cut the ends.
Grate the vegetables.
In a mixing bowl, put the grated zucchini,
add 1 tbsp of salt, set aside for about 15 minutes.
Squeeze out the excess water from the zucchini.
In a bowl, add all the above ingredients.
Seasoning and herbs should be to your own preferences.
(I used fresh dill, a lot of garlic, added some dried shallots and seasoned well with salt and pepper).
Mix well, season to your own taste.
Heat up the oil in a pan.





CAUTION: please be careful with HOT oil!

The batch should be not too thick, not to thin.
If the batch runs thin, add more flour.
Take a spoon and start pouring the batch onto a hot oil.
Flatten out, the fritters should be relatively small and flat for more even frying.
On a medium  heat, fry until golden brown on both sides.

After frying, place the fritters on a paper towel to get rid of the excess grease.



Serve while still hot with sour cream or greek yogurt on the side,
garnish with your favorite herbs,
sauce or gravy.
They are also delicious when cold - great for snacking!

Placuszki z Cukinii z Koperkiem i Sosem Jogurtowym:

2-3 średniej wielkości cukinie
2-4 łyżki jogurtu greckiego lub śmietany
1 mała cebula (pokrojona w kostkę)
2 ząbki czosnku (rozdrobnione)
3 jajka
6-8 łyżki mąki
świeże zioła do wyboru (koperek, pietruszka, bazylia, oregano, itp.)
sól
pieprz
oliwa z oliwek lub olej roślinny (do smażenia)
* opcjonalnie - suche mielonego szalotki


Umyj cukinie i obetnij oba końce.
Zetrzeć na tarce razem ze skórką.
Włożyć startą cukinię do miski,
dodać 1 łyżkę soli, odstawić na około 15 minut.
Wycisnąć nadmiar wody z cukinii.
 Do miski z odciśniętą cukinią dodać wszystkie powyższe składniki.
Dodać przyprawy i zioła powinny do smaku.
(Użyłam świeżego koperku, dużo czosnku,  kilka suszonych listków szalotki i dobrze przyprawiłam solą i pieprzem).
Dobrze wymieszać, doprawić do własnego smaku.

Rozgrzać olej na patelni.

UWAGA: proszę uważać na gorący olej!

Ciasto nie powinno być zbyt gęste ani zbyt rzadkie -
w razie potrzeby dodać więcej mąki do zagęszczenia bądź jogurtu do rozrzedzenia.
Weź łyżkę i rozpocznij wykładać placuszki na gorącym oleju.
Placuszki powinny być cienkie, płaskie, tak, aby łatwo się usmażyły.
Smażyć na złoty kolor po obu stronach.

Po usmażeniu, umieścić placki na papierowym ręczniku, aby pozbyć się nadmiaru tłuszczu.

Podawać na gorąco ze śmietaną bądź jogurtem,
dodać ulubione zioła .
Najlepiej smakują gorące,
ale są też pyszne na zimno - idealne dla przekąski!

Beet Greens & Beet Soup (Botwinka)

Beets & Greens

This soup has always been my number one in the summer time.
Fresh, young beets and their greens are an excellent source of vitamins and minerals.
My Mom makes this soup taste like heaven,
the only problem is - she has no specific recipe, 
she simply knows it and does it by heart.

The following recipe is an attempt of recreating the original taste.

Seasoning is the hardest part of making this soup.
It is the perfect combination of sweet and sour.
You will have to trust your own taste and decide,
what kind of sweet and sour you like.
You will need sugar and lemon juice to achieve the desired taste.
This soup, unlike any other soups, is very sweet and rich in taste!

Simply amazing!

As always, please remember to trust your own taste and modify the recipe to your own needs!


Beet & Beet Greens Soup:
1 gallon of water/broth/stock
3-4 medium size beets with greens
1 onion
5 small potatoes
6-8 tbsp of sour cream
1/2-1 stick of butter
2-4 tbsp of flour
a bunch of dill
1 cup of sugar
1-2 lemons
3-5 tbsp of salt
pepper

Depending on your preferences, heat up or make vegetable/chicken broth
(or water) and bring to boil.
Wash and dry beets and their greens.
Cut up the greens and slice the beets.
Skin and dice potatoes.
Dice the onion.
Wash and cut dill.
Prepare sour cream,
 juice the lemons and get the spices ready.

 Heat the butter in a pan and simmer the onion until golden brown.

When the broth is boiling, add the diced beets and greens.




*NOTE: I put some vegetables in the soup while cooking so that they are soft,
but I also leave some to be more "al dente" when I add them at the end of cooking.

Cook on medium heat for about 20 minutes.

Add the juice from 1-2 lemons.
Add little by little, so that you can control the level of sourness.

Add sugar, salt and pepper 
(again, slowly and step by step).

Add potatoes, dill, more spices (if needed).
Cook for another 15-20 minutes.

In a separate container, 
mix a little bit of soup with 2-3 tbsp of flour.
 Add sour cream, mix well.
Slowly start adding the mixture to the pot of soup.
Keep adding more sour cream mixture, 
constantly mixing.

Let cook for another 10-20 minutes,
adding the remaining (if any) portions of vegetables
until everything is cooked.

Season more to your own taste.

The soup should be creamy, very rich in taste,
with a perfect combination of sweet, sour and spicy.







You may serve it with a hard boiled egg.

Ta zupa zawsze była moim numerem jeden w okresie letnim.
Świeże, młode buraki i ich liście są doskonałym źródłem witamin i minerałów.
Botwinka mojej Mamy smakuje jak niebo w gębie!
Jedynym problemem jest to, że nie mam na nią konkretnego przepisu.

Poniższy przepis jest próbą odtworzenia oryginalnego smaku pysznej botwinki mojej Mamy.

Przyprawienie botwinki jest najtrudniejszą częścią gotowania tej zupy.
Jest to idealne połączenie słodkiego i kwaśnego.
Do uzyskania pożądanego smaku,
potrzebny będzie cukier i sok z cytryny bądź kwasek cytrynowy.
Ta zupa, w przeciwieństwie do innych zup, jest dość słodka  i  niesamowicie bogata w smaku!


Botwinka z Młodych Buraków i Liści:
1 galon wody / bulionu warzywnego bądź wywaru z kości/mięsa
3-4 średnie buraki z botwiną
5 małych ziemniaków
6-8 łyżki kwaśnej śmietany
ok. pół kostki masła
2-4 łyżki mąki
pęczek koperku
1 szklanka cukru
1-2 cytryn
(bądź kwasek cytrynowy)
3-5 łyżki soli
pieprz


PRZYGOTOWANIE

Przygotować bulion, wywar - bazę zupy,
wg własnych upodobań.

Buraki umyć wraz z liśćmi, pokroić.
Obrać i pokroić w kostkę ziemniaki.
Cebulę również pokroić w kostkę.
Koperek umyć i pokroić.
Przygotować śmietanę i sok z cytryny.

  Rozgrzać masło na patelni i na wolnym ogniu dusić cebulę na złoty kolor.

Kiedy bulion się zagotuje, dodać pokrojone w kostkę buraki i botwinę.

* UWAGA: dodaję trochę warzyw do zupy podczas gotowania tak, by były miękkie,
ale również zostawiam trochę  do dodania pod koniec gotowania, aby się nie rozlatywały w zupie.

Gotować na średnim ogniu przez około 20 minut.

Dodaj sok z 1-2 cytryn (lub kwasku cytrynowego) do smaku.
Dodaj stopniowo, tak aby można było kontrolować poziom kwaśności.

Dodaj cukier, sól i pieprz
(znowu, powoli i krok po kroku).

Dodaj ziemniaki, koperek, więcej przypraw (w razie potrzeby).
Gotować przez kolejne 15-20 minut.

W osobnym pojemniku,
wymieszać trochę zupy z 2-3 łyżkami mąki.
  Dodać śmietanę, dobrze wymieszać.
Powoli zacząć dodawać mieszaninę do garnka z zupą,
stale mieszając.

Gotować przez kolejne 10-20 minut,
dodać pozostałą część warzyw
i gotować do miękkści ziemniaków.

Zupa powinna być kremowa, bardzo bogata w smaku,
który jest doskonałym połączeniem słodkiego, kwaśnego i ostrego.
