Carrot & Pineapple Cake (Ciasto Marchewkowe z Ananasem)

The Best Carrot Cake

I have been wanting to bake a carrot cake for a long time.
I was very lucky to use this wonderful recipe by Ina Garten from Food Network.
Testing out this recipe, I changed the form and the finish of the cake.
It was too much frosting for us so I decided to make less of it and use less sugar overall.
Also, instead of using the round cake pans, 
I wanted to bake the cakes in smaller, loaf pans.

It was, by far, the best carrot cake we have ever eaten.
Definitely worth baking this fall!


INGREDIENTS

For the cake:
2 cups granulated sugar 
(I used about 1 3/4 cups)
1 1/3 cups vegetable oil
3 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups plus 1 tablespoon all-purpose flour, divided
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
(I only used 1/2 teaspoon)
1 cup raisins
1 cup chopped walnuts
1 pound carrots, grated
1/2 cup diced fresh pineapple
(I used pineapple in light syrup)

For the frosting:

ATTENTION: 
If you are using 2 round cake pans 
and if you are planning on using the cheese cream frosting between the cake layers,
 stick with these proportions.
I used only 1/2 of the proportions and still, it was too much.

3/4 pound cream cheese, at room temperature
(I used 6 oz)
1/2 pound unsalted butter, at room temperature
(I used 4 oz)
1 teaspoon pure vanilla extract
(I used 1/2 tsp)
1 pound confectioners' sugar, sifted
(I used 6 oz)

For the decoration:
1/2 cup diced fresh pineapple
walnuts



PREPARATION

Preheat the oven to 350 degrees F.

Butter 2 (8-inch) round cake pans. Line with parchment paper, then butter and flour the pans.
(I used 2 loaf pans 8x4 in. Buttered and sprinkled with farina inside).

For the cake:
Beat the sugar, oil, and eggs together in the bowl of an electric mixer until light yellow.
 Add the vanilla. 
In another bowl,
 sift together 2 1/2 cups flour, the cinnamon, baking soda, and salt.

Add the dry ingredients to the wet ingredients. 
Toss the raisins and walnuts with 1 tablespoon flour. 
Fold in the carrots and pineapple.
 Add to the batter and mix well.

Divide the batter equally between the 2 pans.
 Bake for 55 to 60 minutes, or until a toothpick comes out clean. 
(I only baked for 40 minutes).
Allow the cakes to cool completely in the pans set over a wire rack.

For the frosting:
Mix the cream cheese, butter and vanilla until just combined. 
Add the sugar and mix until smooth.

Place 1 layer, flat-side up, on a flat plate or cake pedestal. 
With a knife or offset spatula, spread the top with frosting.
 Place the second layer on top, rounded side up, 
and spread the frosting evenly on the top and sides of the cake.
 Decorate with diced pineapple

(I took the cakes out of the pans to cool.
Spread the cream cheese on top.
Decorate with pineapple and walnuts.)

Najlepsze Ciasto Marchewkowe

Juz od dluzszego czasu chcialam upiec ciasto marchewkowe.
Na szczescie udalo mi sie znalezc ten cudowny przepis autorstwa Iny Garten z Food Network.
Wyprobowujac powyzszy przepis zmienilam jednak forme ciasta i jego wykonczenie.
Jak dla nas, bylo za duzo kremu i cukru, 
dlatego zmienilam proporcje i uzycie kremu.
Ciasto upieklam w dwoch malych "keksowkach" zamiast okraglej, tortowej blachy
i nie przekladalam ciasta kremem w srodku, jedynie posmarowalam na wierzchu.

Jak narazie, bylo to najlepsze ciasto marchewkowe, 
jakie jedlismy!
Naprawde warte wyprobowania tej jesieni!



SKLADNIKI

Na ciasto :
2 szklanki cukru pudru
(Uzylam tylko 1 3/4 szklanki )
1 1/3 szklanki oleju roślinnego
3 bardzo duże jajka, w temperaturze pokojowej
1 łyżeczka czystego ekstraktu z wanilii
2 1/2 szklanki maki plus 1 łyzka oddzielnie
2 łyżeczki mielonego cynamonu
2 łyżeczki sody oczyszczonej
1 1/2 łyżeczki soli 
(Użylam tylko pół łyżeczki)
1 szklanka rodzynek
1 szklanka posiekanych orzechów włoskich
450 g marchwi, startej
1/2 szklanki ananasa 
(uzylam tego w lekkim syropie, z puszki)

Na krem:

UWAGA:
Jeśli używasz 2 okrągłe blachy tortowe i chcesz przelozyc ciasto,
uzyj orginalnych proporcji.
Ja zmniejszylam je o polowe, a kremu i tak mialam za duzo.

340 g serka Philadelphia w temperaturze pokojowej
(Użyłam 170 g)
225 g masła , w temperaturze pokojowej
(Użyłam 110 g)
1 łyżeczka czystego ekstraktu z wanilii
(Uzylam 1/2 łyżeczki)
340 g cukru pudru
(Użyłam 170g)

Do dekoracji :
1/2 szklanki pokrojonego w kostkę ananasa
orzechy wloskie



PRZYGOTOWANIE

Rozgrzej piekarnik do 180C.
Wysmaruj formy na ciasto maslem i wysyp bulka tarta lub kasza manna. 

Na ciasto :
Cukier, olej i jajka  zmiksuj razem mikserem aż do uzyskania jasnożółtej masy.
 Dodać wanilię .
W drugiej misce przesiać razem 2 1/2 szklanki mąki, cynamon, sodę i sól.

Dodaj suche składniki do mokrych składników.
Przemieszac rodzynki i orzechy włoskie z 1 łyżką mąki.
Dodac do marchwi i ananasa, wymieszac,
 Marchew, ananasa, rodzynki i orzechy dodac do wymieszanej masy na ciasto,
 dobrze wymieszać,
nie miksowac.

Podzielić ciasto równo między 2 blachy.
 Piec przez 55 do 60 minut, aż wbita wykałaczka bedzie czysta i sucha.
(U mnie pieczone tylko przez 40 minut).
Pozostawić ciasto do całkowitego ostygnięcia,
najlepiej na kratce.

Na krem:
Wymieszać mikserem serek Philadelphia, masło i wanilię aż się połączą.
Dodać cukier i mieszać do uzyskania gładkiego kremu.

Jesli robicie torcik, polozyc jedna warstwe ciasta i przelozyc kremem.
Nalozyc druga warstwe ciasta, 
rozprowadzic krem dookola.
Na wierzchu ulozyc ananasa.

Ja wyjelam ciasto z keksowek i ostudzilam.
Posmarowalam kremem na wierzchu,
udekorowalam ananasem i orzechami.
